Spicy Chicken With Spinach Couscous

  1. Combine oil, garlic, cumin, paprika, 1 tsp salt and chili. Add chicken and toss to coat. Cook chicken on a heated oiled frying pan for 3-4 mins per side, or until browned and just cooked through. Remove from pan and cover to keep warm.
  2. To make the spinach couscous, bring chicken stock to a boil. Pour over couscous, cover and set aside for about 5 mins, until liquid is absorbed. Heat butter in a large frying pan. Add couscous and cook, stirring, until couscous is separated and fluffy. Add lemon zest, spinach and season.
  3. Serve chicken on a bed of spinach couscous. Garnish with lemon wedges.
