Spicy Chicken With Spinach Couscous
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp ground cumin
- 1 tsp ground paprika
- 1/2 tsp dried chili flakes
- 4 None chicken breast, halved horizontally
- None None lemon wedges, for serving
- None None Spinach couscous
- 1 cup chicken stock
- 7 oz couscous
- 3 tbsp butter
- 2 tsp lemon zest
- 5 cups baby spinach
- Combine oil, garlic, cumin, paprika, 1 tsp salt and chili. Add chicken and toss to coat. Cook chicken on a heated oiled frying pan for 3-4 mins per side, or until browned and just cooked through. Remove from pan and cover to keep warm.
- To make the spinach couscous, bring chicken stock to a boil. Pour over couscous, cover and set aside for about 5 mins, until liquid is absorbed. Heat butter in a large frying pan. Add couscous and cook, stirring, until couscous is separated and fluffy. Add lemon zest, spinach and season.
- Serve chicken on a bed of spinach couscous. Garnish with lemon wedges.
