Pasta Salad With Shrimp, Avocado And Melon

  1. Cook the pasta in boiling salted water as per the package instructions. Add shrimp for the last minute of cooking, drain, transfer to a bowl and drizzle with 1 tbsp olive oil. Add melon balls, avocado slices, onion, basil and arugula to the bowl and mix well.
  2. For the dressing, mix the garlic, 4 tbsp olive oil and lemon juice together in a bowl. Season with salt and pepper and pour over the salad. Mix well and refrigerate until ready to serve.
