Gluten-Free Lamingtons
- 1 cup gluten-free cornflour
- 1/2 tsp gluten-free baking powder
- 3 None eggs
- 1/2 cup granulated sugar
- 1/2 tsp vanilla extract
- None None FOR THE ICING
- 3 cups gluten-free powdered sugar
- 1/3 cup unsweetened cocoa powder
- 2 tbsp butter, at room temperature
- 1 cup flaked coconut
- Preheat the oven to 350u0b0F. Grease a foil-lined 11 x 7 inch baking pan, extending the foil over long sides for handles.
- Sift cornstarch and baking powder together 3 times into a large bowl. Beat eggs, granulated sugar and vanilla extract in a large bowl with an electric mixer until thick and creamy. Fold in sifted dry ingredients. Pour into prepared pan.
- Bake for 25 mins or until golden and firm. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack.
- For the icing, sift powdered sugar and cocoa powder into a large bowl. Add butter and 1/2 cup boiling water. Stir until smooth.
- Cut cake lengthwise into 3 even strips. Cut each strip into 6 pieces. Place coconut on a large plate. Using 2 forks, dip each piece into icing mixture; allow excess to drip off. Roll in coconut. Place on a wire rack and let stand until set.
