Mickey Rooney'S Salmon Surprise
- 1 large can pink salmon
- 6 Tbsp. mayonnaise
- 1 medium dill pickle, chopped
- 1 small onion, chopped
- 1 small stalk celery, chopped
- 1 large green cabbage leaf, grated
- 1 c. small elbow macaroni, cooked
- 1/4 c. diced Cheddar cheese
- 1/4 tsp. salt
- 1/4 tsp. white pepper
- 1/4 tsp. vinegar
- 1/4 c. croutons
- 1 tsp. capers
- 1 small can sweet petite peas
- lettuce leaves
- paprika
- In small bowl, mix salmon and mayonnaise together, then mash. In separate bowl mix pickle, onion, celery and cabbage leaf.
- In large bowl mix macaroni and Cheddar cheese.
- Add salmon mixture and pickle mixture to macaroni.
- Add salt, pepper, vinegar, croutons and capers.
- Mix well.
- Add peas.
- Chill mixture in refrigerator for 1 hour.
- Line 4 separate plates with lettuce. Mound mixture on lettuce.
- Sprinkle with paprika.
- Serve.
