Lentils With Potatoes And Tomatoes
- 1 large onion, finely chopped
- 3 cloves garlic, crushed
- 3 medium pieces fresh ginger, finely grated
- 1 None fresh long red chili pepper, seeded and finely chopped
- 1 tbsp vegetable oil
- 1 large potato, peeled and chopped
- 12 oz sweet potato, peeled and chopped
- 3 medium tomatoes, chopped
- 1 tsp garam masala
- 1 tsp ground turmeric
- 1/2 cup red lentils, rinsed
- 2 cups vegetable stock
- 6 None chapatti, to serve
- None None Olive oil cooking spray
- Process the onion, garlic, ginger, chili pepper and 1 tbsp water in a food processor until smooth.
- Heat the oil in a large saucepan on medium heat. Add the onion mixture, potato, sweet potato, tomatoes and spices. Cook, stirring, for 5 mins. Add the lentils and stock. Bring to a boil. Reduce heat to low and simmer, stirring occasionally, for 25-30 mins, or until the lentils are tender and the sauce thickens.
- Meanwhile, preheat the oven to 350u0b0F. Spray the chapatti with oil and sprinkle with sea salt and cracked black pepper. Place on 2 large baking sheets. Bake for 6-8 mins or until golden and crisp. Break into pieces and serve with the lentil mixture.
