One Bowl Chocolate Cake
- 12 1/2 tbsp butter, softened
- 1 tsp vanilla extract
- 1 1/3 cups granulated sugar
- 2 None large eggs
- 1 1/2 cups self-rising flour, sifted
- 1/2 cup cocoa powder
- 3 oz dark chocolate, coarsely chopped
- 1 cup powdered sugar, sifted
- Preheat oven to 350u0b0F. Grease and line a deep 8 inch round cake pan with parchment paper.
- In a mixer, beat 1/2 cup butter, vanilla, sugar, eggs, flour, cocoa powder and 2/3 cup water until combined. Increase speed to medium and beat for 3 mins, or until smooth and pale. Transfer to prepared pan and bake for 1 hour, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
- Meanwhile, to make the chocolate icing, melt chocolate and remaining butter over a double boiler. Gradually stir in powdered sugar and 2 tbsp hot water, stirring until icing is spreadable.
- Spread icing over cold cake. Serve.
