Spinach And Goat Cheese Pizza With Salsa
- 2-3 None shallots, peeled and finely diced
- 1 clove garlic, crushed
- 750 g baby leaf spinach
- 4 tbsp olive oil
- 1 pinch grated nutmeg
- 400 g fresh pizza dough, chilled
- 150 g hard goat's cheese, grated
- 250 g cherry tomatoes, quartered
- 1/2 bunch spring onions, cut into rings
- 1/2 bunch basil, leaves removed and cut into strips
- Preheat oven to 425u0b0F. Grease a baking tray. Heat 2 tbsp olive oil and saute shallots and garlic. Add spinach and a little water, cover and allow to cook for about 5 mins. Drain then season and add a pinch of nutmeg. Set aside.
- On a floured work surface, roll out dough into a 10x14 inch rectangle and place on prepared pan. Cover with spinach mixture then top with grated cheese. Bake for 15-20 mins.
- For the salsa, combine tomatoes, spring onions, basil and remaining olive oil. Season. Spread over hot pizza to serve.
