Johnny Appleseed Bars
- 1 c. sifted flour
- 1/2 tsp. baking soda
- 1 1/2 c. rolled oats (uncooked)
- 2/3 c. brown sugar, firmly packed
- 1 egg
- 2 c. peeled apples, thinly sliced
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 c. shortening, melted
- 1 tsp. vanilla
- 1/4 c. chopped pecans
- Mix and sift flour, salt, baking soda and cinnamon.
- Add everything else except for the apples and pecans, then beat mixture until smooth (about 2 minutes).
- Press 1/2 of dough into bottom of a greased 9-inch square baking pan.
- Sprinkle pecans over dough.
- Arrange apple slices over pecans.
- Roll remaining dough between 2 sheets of waxed paper to form a 9-inch square. Remove top sheet; place over filling.
- Remove other sheet.
- Press lightly around edges.
- Bake at 350u0b0 for 25 to 30 minutes.
- When cool, sprinkle with confectioners sugar.
- Cut into bars.
