Banana And Honey Bread Pudding
- 2 cups light evaporated milk
- 1/2 cup skim milk
- 1/4 cup honey
- 1 None cinnamon stick
- 1 None vanilla bean, split lengthwise and seeds scraped out
- 4 None eggs
- 8 slices whole wheat bread, crusts removed, cut into quarters
- 2 medium bananas, thickly sliced
- 1 tbsp demerara sugar
- None None Ground cinnamon, for sprinkling
- None None Low fat plain yogurt and honey, to serve
- Preheat the oven to 350u0b0F. Lightly grease a 2-quart baking dish.
- Place milks, honey, cinnamon stick and vanilla bean and seeds in a medium saucepan on medium heat. Stir for 5-7 mins, until mixture is hot. Strain into a large bowl. Cool slightly.
- Whisk eggs in a large bowl, until frothy. Gradually whisk in the warm milk mixture.
- Place alternate layers of bread and banana in the prepared dish, slightly overlapping the pieces. Pour the egg mixture over the top. Sprinkle with sugar.
- Place baking dish in a large roasting pan. Add enough boiling water to roasting pan to come halfway up the sides of the baking dish.
- Bake for 45-50 mins, until custard is set (a knife inserted into the center will come out clean). Remove baking dish from roasting pan. Cool for 5 mins. Dust with cinnamon. Serve with low fat yogurt mixed with honey.
