Portuguese Roasted Spatchcocks With Potatoes
- 2 None whole chickens, spatchcocked, halved
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 lb potatoes, cut into thin wedges
- 1 tbsp dried oregano
- 3 tsp sweet paprika
- 1/4 tsp cayenne
- 2 tbsp lemon juice
- None None steamed green beans, to serve
- Preheat oven to 400u0b0F.
- Place chicken halves in a large baking dish, breast-side up. Drizzle with 2 tbsp oil and rub with garlic, salt and pepper.
- Place potatoes and remaining oil in a second large baking dish. Combine oregano, paprika and cayenne in a small bowl. Sprinkle 1/2 over potatoes, tossing to coat. Rub remaining spice over chicken then pour lemon juice over top.
- Bake potatoes and chicken for 40-45 mins, basting several times during cooking, until potatoes are golden and chicken is cooked through. Serve with steamed green beans.
