Broccoli, Rice, Cheese And Chicken Casserole
- 2 c water
- 2 c uncooked instant rice
- 2 cans condensed cream of chicken soup
- 4 stalks celery, chopped small
- 1/4 c butter
- 1 c milk
- 16 oz frozen broccoli, chopped
- 1 onion, chopped
- 1 lb processed cheese, cubed
- Preheat oven to 350u0b0.
- In a medium saucepan, bring water to a boil.
- Mix in the instant rice.
- Cover and remove from heat.
- Let stand 5 minutes.
- In a large skillet, melt butter.
- Add onion and celery.
- Cook until onion is beginning to be transparent.
- Do not brown.
- Add frozen broccoli.
- Cook for a few minutes (until broccoli is not frozen).
- Stir in soup and milk.
- Heat until it begins to simmer.
- Add cheese to hot mixture.
- In a 9x13 inch baking dish, mix the prepared rice, cream of chicken soup, butter, milk, broccoli, onion and cheese.
- Bake for 30-35 minutes or until cheese is bubbly and top is lightly brown.
