Mixed Greens With Rye Crusted Cheese Balls

  1. In a food processor, pulse rye bread to fine breadcrumbs. Toast breadcrumbs in a dry frying pan for 2 mins, tossing. Set aside to cool.
  2. Meanwhile, combine cream cheese and cream. Fold in green onions and herbs. Season then roll into 16 balls. Roll in toasted breadcrumbs. Chill.
  3. To make the dressing, heat 2 tbsp water and sugar. Simmer for 3-4 mins, until caramelized. Gradually whisk in carrot juice and orange juice. Simmer for 10 mins to reduce. Let cool. Whisk in vinegar, honey and oil. Season.
  4. Toss together baby greens and carrot strips. Distribute between 4 serving plates. Top with cheese balls and drizzle with dressing. Serve extra dressing on the side.
