Wild Rice Salad With Spinach And Figs
- 2 cups wild rice blend
- 3/4 cup coarsely chopped pecans
- 8 None dried figs, thinly sliced
- 2 cups baby spinach leaves
- 2 None green onions, thinly sliced
- 2 tsp finely grated orange peel
- 4 None fresh figs, quartered, for garnish
- None None FOR THE ORANGE BALSAMIC DRESSING
- 1/2 cup orange juice
- 2 tbsp olive oil
- 1 tbsp white balsamic vinegar
- Cook rice, uncovered, in a large saucepan of boiling water until tender; drain. Rinse under cold water; drain. Place in large bowl.
- Meanwhile, for the dressing, whisk orange juice, olive oil and balsamic vinegar in a small bowl.
- Add dressing and remaining ingredients to rice; toss gently to combine. Serve topped with fresh figs.
