Citrus Souffles With White Chocolate Sauce

  1. Preheat the oven to 400u0b0F. Lightly grease four 3/4-cup souffle dishes.
  2. Stir butter, granulated sugar and peels in a medium saucepan on medium heat until butter is melted. Add flour and cook, stirring, for 1 min. Remove from heat.
  3. Whisk in hot milk. Return to heat. Cook, stirring, for 4-5 mins, or until mixture boils and thickens. Beat in yolks and orange juice. Set aside to cool slightly.
  4. Beat egg whites in a clean bowl with electric mixer on medium speed until soft peaks form. Fold lightly into mixture in saucepan. Spoon evenly into prepared dishes.
  5. Bake for 15-20 mins, until puffed and golden.
  6. Meanwhile, for the white chocolate sauce, heat cream in a small saucepan on high heat. Remove from heat. Add chocolate and lemon peel, stirring, until melted.
  7. Dust souffles with powdered sugar. Serve with white chocolate sauce, for drizzling.
