Chocolate Rice Pudding With Poached Pears
- 2 oz Arborio rice
- 3 cups milk
- 1 cup heavy cream
- 1/3 cup sugar
- 3.5 oz milk chocolate, finely chopped
- None None whipped cream, to serve
- None None chocolate curls, to serve
- None None For the poached pears
- 4 None small firm pears, peeled, cored, quartered
- 750 ml sweet white wine
- 3/4 cup granulated sugar
- 1 1/2 inch fresh ginger, peeled, thinly sliced
- 1 None whole star anise
- In a medium saucepan, combine rice, milk, cream and sugar. Cover and bring to a boil over medium heat. Reduce heat and simmer, uncovered, for 35-40 mins, stirring occasionally, until rice is tender and most of liquid is absorbed.
- Meanwhile, for the poached pears, combine all ingredients in a medium saucepan. Bring to a boil over high heat. Reduce heat and gently simmer, covered, for 30-35 mins, until tender.
- To finish, add chocolate to hot rice and stir until melted and smooth. Serve with poached pears, topped with whipped cream and chocolate curls.
