Gnocchi With Shrimp And Peas
- 1 1/4 lb potatoes
- 1 None egg, lightly beaten
- 1 cup all-purpose flour
- 1 oz Parmesan cheese, grated
- 1 pinch nutmeg
- 8.5 oz frozen peas
- 3 1/2 tbsp butter
- 1 lb raw shrimp, peeled, halved lengthwise
- 2 tbsp small mint leaves
- Cook potatoes in salted boiling water for 20-25 mins, until tender. Drain. Let cool slightly then peel. Mash until smooth or pass through a potato ricer into a large bowl. Let cool completely.
- Add egg, flour, Parmesan and nutmeg. Season. Gently mix until smooth. Turn dough out onto a lightly floured surface. Divide into 3 portions. Roll each portion into a 1/2 inch-wide log. Cut into 1 inch pieces.
- Bring a large saucepan of salted water to a boil. Cook peas for 2 mins, until just tender. Remove with a slotted spoon and set aside. Bring water back to a boil. Cook gnocchi, in 2 batches, for 1-2 mins, until gnocchi floats to the surface. Remove with a slotted spoon. Drain.
- Melt butter in a large frying pan over medium heat. Cook shrimp, stirring, for 2-3 mins, until opaque and butter starts to brown. Add gnocchi, peas and mint. Toss for 1 min, until heated through. Season. Distribute between serving bowls. Serve.
