Herbed Fish Packets With And Roasted Vegetables

  1. Preheat the oven to 450u0b0F. Lightly grease a large baking dish.
  2. Microwave potatoes on high 4 to 5 mins or until just tender. Place potatoes, zucchini and pepper in prepared dish. Dot potatoes with 1 tbsp of the butter and brush zucchini and pepper with oil. Season. Roast for 20 mins.
  3. Meanwhile, place four 12-inch square sheets of parchment paper on a work surface. Place fish fillets in the center of pieces of paper. Top with lemon slices, herbs, lemon peel and remaining 2 tbsp butter. Season. Bring 2 sides of the paper together and double fold. Fold the sides and tuck underneath the fish to create a sealed packet. Place on a baking sheet.
  4. Reduce the oven temperature to 425u0b0F. Bake the fish packets for about 10 mins or until cooked as desired. Serve the fish with roasted vegetables. Sprinkle with chopped chives and dill sprigs, if desired.
