Bacon And Pepper Bread Pudding
- 3 slices bacon, chopped
- 1 None medium onion, finely chopped
- 1/2 lb sourdough bread, crusts removed, cut into 1 inch cubes
- 1/3 cup char-grilled peppers, coarsely chopped
- 1/4 cup fresh flat-leaf parsley, coarsely chopped
- 3/4 cup cheddar cheese, grated
- 4 None eggs, at room temperature
- 2 cups milk
- Preheat oven to 350u0b0F. Grease and line an 8 inch cake pan with parchment paper. Heat a medium frying pan over medium heat, add bacon and onion and cook, stirring, for 5 mins, or until onion is soft. Remove from heat.
- Arrange 1/2 cubed bread in prepared pan. Top with 1/2 the bacon and onion mixture, 1/2 the peppers, 1/2 the parsley and 1/2 the cheese. Repeat.
- Whisk together eggs and milk then season. Pour over bread mixture. Set aside for 5 mins. Bake for 30 mins, or until golden brown and set. Let cool for 5 mins then slice and serve.
