Cheese And Seed Crackers
- 10 tbsp (1 1/4 sticks) cold butter
- 1 1/2 cups flour
- None None Pinch cayenne pepper
- 1 cup coarsely grated aged Cheddar cheese
- 1/2 cup coarsely grated Parmesan cheese
- 2 tbsp sesame seeds
- 2 tbsp poppy seeds
- Coarsely grate butter into food processor bowl. Add flour and cayenne pepper; process until crumbly. Add cheeses; process until dough comes together. Turn dough onto floured surface; knead until smooth.
- Roll dough into two 6-inch logs. Sprinkle sesame seeds in a shallow dish; sprinkle poppy seeds in another shallow dish. Roll each log in one type of seed. Wrap logs in plastic wrap; refrigerate 1 hour or until firm.
- Meanwhile, preheat the oven to 350u0b0F. Line baking pans with parchment paper.
- Cut logs into 1/4 inch-thick slices. Place slices, about 1 inch apart, on prepared pans.
- Bake about 15 mins. Cool in pans 2 mins. Remove from pans; cool completely on wire rack.
