Swedish Turkey Meatballs With Lingonberry Jam And Mashed Potatoes
- 1 lb potatoes, peeled and chopped
- 1 lb ground turkey
- 1 None red onion, finely chopped
- 1/4 cup lingonberry jam, plus additional, to serve
- 2 tbsp chopped parsley
- 1 tbsp tomato sauce
- 1 cup dried breadcrumbs
- 1 tbsp oil
- 1/4 cup milk
- 2 tbsp butter
- 1/2 cup shredded Cheddar cheese
- None None Salad greens, to serve
- Place potatoes in a large saucepan and cover with cold water. Bring to a boil and cook for 15-20 mins, until tender.
- Meanwhile, combine the ground turkey, onion, lingonberry jam, parsley and tomato sauce in a large bowl. Season to taste and mix well. Shape into 8 even-sized patties, then flatten slightly. Coat in breadcrumbs.
- Heat the oil in a large skillet on high heat. Cook the patties for 3-4 mins each side until cooked through. Remove from the pan and drain on paper towels. Keep warm in the oven at 250u0b0F.
- Meanwhile, drain the potatoes thoroughly and return them to the pan. Mash well with milk and butter. Mix in the cheese and season to taste.
- Serve the patties with mashed potatoes, salad and additional jam.
