Swedish Turkey Meatballs With Lingonberry Jam And Mashed Potatoes

  1. Place potatoes in a large saucepan and cover with cold water. Bring to a boil and cook for 15-20 mins, until tender.
  2. Meanwhile, combine the ground turkey, onion, lingonberry jam, parsley and tomato sauce in a large bowl. Season to taste and mix well. Shape into 8 even-sized patties, then flatten slightly. Coat in breadcrumbs.
  3. Heat the oil in a large skillet on high heat. Cook the patties for 3-4 mins each side until cooked through. Remove from the pan and drain on paper towels. Keep warm in the oven at 250u0b0F.
  4. Meanwhile, drain the potatoes thoroughly and return them to the pan. Mash well with milk and butter. Mix in the cheese and season to taste.
  5. Serve the patties with mashed potatoes, salad and additional jam.
