Coffee Date Loaf Cake
- 1/2 cup milk
- 1/3 cup butter (5 1/3 tbsp)
- 1 tbsp instant coffee powder
- 1/2 cup sugar
- 3 1/2 oz fresh dates, pitted, coarsely chopped
- 1 large egg, lightly whisked
- 1 1/2 cups self-rising flour
- None None Softly whipped cream, to serve
- Preheat oven to 325u0b0F. Grease and line bottom and sides of a 8 x 4 x 2 1/2-inch loaf pan with parchment, extending paper at long sides for handles.
- Place milk, butter and coffee in a large saucepan over moderately high heat. Cook and stir for 1 minute or until butter melts and coffee dissolves.
- Remove pan from heat. Add sugar and dates; stir to combine. Whisk in egg until combined. Add sifted flour; stir until just combined.
- Spoon mixture into prepared pan; level top. Bake for 45 minutes or until a skewer inserted at center comes out clean. Cool in pan for 10 minutes, then turn out to a wire rack to cool completely.
- Serve sliced, with whipped cream.
