Flash Fried Beef And Vermicelli Salad
- 9 oz rice vermicelli noodles
- 1 None cucumber, halved lengthwise and sliced diagonally
- 1 large carrot, cut into matchsticks
- 1/2 cup fresh mint leaves, plus additional, for garnish
- 1/3 cup fresh cilantro leaves, plus additional, for garnish
- 1/4 cup lime juice
- 2 tbsp packed brown sugar
- 1 tbsp fish sauce
- 1 None red chili pepper, seeded and finely chopped
- 2 tsp vegetable oil
- 1 lb beef sirloin steak, thinly sliced
- 1 tbsp chopped roasted peanuts
- Place vermicelli noodles in a large bowl and cover with boiling water. Let stand for 5 mins. Drain, rinse and set aside (noodles should be tender but firm). Repeat with fresh boiling water if necessary. Place vermicelli noodles in a large bowl. Add cucumber, carrot and herbs.
- For the lime dressing, combine lime juice, sugar, fish sauce and chili pepper in a small bowl. Add to vermicelli salad and toss to coat well.
- Heat oil in a large wok or skillet on high heat. Stir-fry beef for 2-3 mins, until browned. Pile beef over vermicelli salad. Sprinkle with peanuts and garnish with additional herbs.
