Sausage And Zucchini Penne

  1. Lightly coat a large nonstick frying pan with oil and place over medium heat. Cook sausages until browned and cooked through. Let cool then slice thickly.
  2. Add olive oil to pan and increase heat to high. Saute zucchini, onion and garlic for 3-4 mins, until tender. Add tomatoes and season to taste.
  3. Meanwhile, cook pasta in boiling salted water until al dente. Drain.
  4. Toss pasta and sausages through sauce. Top with chargrilled peppers, feta and basil. Serve with crusty bread.
