Roasted Cornish Game Hens With Mustard

  1. Preheat the oven to 400F. Place the halved hens in a large roasting pan and season generously with salt and freshly ground black pepper.
  2. Mix together the oil, rosemary, mustard and honey in a small bowl and brush liberally over the hens. Bake for 30 minutes then remove and baste with the pan juices.
  3. Place a slice of prosciutto on top of each half and return to the oven for a further 10 minutes until the hens are golden and cooked through. To test, insert a skewer between the leg and thigh and check to see if the juices run clear.
  4. Serve with oven-roasted vegetables such as carrots, celery and new potatoes tossed with herbs.
