Roasted Cornish Game Hens With Mustard
- 2 (1 lb) Cornish game hens, halved
- 3 tbsp olive oil
- 2 tbsp fresh chopped rosemary leaves
- 2 tbsp wholegrain mustard
- 1 tbsp honey
- 4 None slices prosciutto
- None None oven-roasted vegetables such as carrots, celery and new potatoes tossed with herbs to serve
- Preheat the oven to 400F. Place the halved hens in a large roasting pan and season generously with salt and freshly ground black pepper.
- Mix together the oil, rosemary, mustard and honey in a small bowl and brush liberally over the hens. Bake for 30 minutes then remove and baste with the pan juices.
- Place a slice of prosciutto on top of each half and return to the oven for a further 10 minutes until the hens are golden and cooked through. To test, insert a skewer between the leg and thigh and check to see if the juices run clear.
- Serve with oven-roasted vegetables such as carrots, celery and new potatoes tossed with herbs.
