Chicken Cacciatore
- 5 lbs chicken pieces
- 2 tbsp flour
- 1 tbsp olive oil
- 1 None onion, chopped
- 3 cloves garlic, crushed
- 1/3 cup dry white wine
- 14 oz tomato puree
- 4 None anchovies, finely chopped
- 2 tbsp shredded basil, plus more leaves to serve
- 2 oz black olives, pitted, halved
- None None pasta, cooked according to package instructions, to serve
- Dust chicken pieces with flour. Heat oil in a flameproof casserole dish on high. Saute chicken, in batches, 2 mins each side, until browned. Remove from pan and set aside.
- Reduce heat to medium. Add onion and garlic to pan and saute 3 mins, until soft. Return chicken thighs to pan and add wine. Simmer 2 mins, until wine has almost all evaporated. Add tomato puree and 1 cup water. Cover and simmer 5 mins. Add drumsticks and cook, covered, 5 more mins. Add remaining chicken and anchovies and simmer, covered, 15 mins, until cooked through. Stir in shredded basil and sprinkle with olives. Garnish with basil leaves and serve with pasta.
