Cod And Parma Ham With Madeira Sauce And Wild Rice
- 1/2 lb wild rice
- 7 tbsp oil
- 3 None shallots, peeled, 2 cut into thin wedges, 1 diced
- 2/3 cup vegetable stock
- 1/2 cup Madeira wine
- 1 tbsp lemon juice
- 4 - 5.25 oz cod fillets
- 2 slices Parma ham, halved
- 4 None large sage leaves
- 4 tbsp cider vinegar
- 1 tsp wholegrain mustard
- 2 tsp honey
- 1/2 lb mixed salad greens
- 1/2 lb cherry tomatoes, halved
- Cook the rice in boiling salted water according to the package instructions. Drain and keep warm.
- For the sauce, heat 1 tbsp oil in a saucepan and sweat the shallot wedges for 4 mins, turning. Add the stock and Madeira, bring to a boil then simmer for 5 mins. Add the lemon juice and season.
- Meanwhile, season the cod, top each fillet with 1/2 slice of ham and 1 sage leaf and secure with a toothpick. Heat 2 tbsp oil in a frying pan and saute for 5 mins, turning.
- To serve, whisk the vinegar, mustard and honey. Season then gradually whisk in 4 tbsp oil. Add the diced shallot then toss with the salad greens and tomatoes. Serve with the rice, fish and sauce.
