Cod And Parma Ham With Madeira Sauce And Wild Rice

  1. Cook the rice in boiling salted water according to the package instructions. Drain and keep warm.
  2. For the sauce, heat 1 tbsp oil in a saucepan and sweat the shallot wedges for 4 mins, turning. Add the stock and Madeira, bring to a boil then simmer for 5 mins. Add the lemon juice and season.
  3. Meanwhile, season the cod, top each fillet with 1/2 slice of ham and 1 sage leaf and secure with a toothpick. Heat 2 tbsp oil in a frying pan and saute for 5 mins, turning.
  4. To serve, whisk the vinegar, mustard and honey. Season then gradually whisk in 4 tbsp oil. Add the diced shallot then toss with the salad greens and tomatoes. Serve with the rice, fish and sauce.
