Gingerbread With Lemon Sauce

- 1 drop yellow food coloring (if desired)
- 1 1/4 c. sugar
- 1/2 c. cooking oil
- 1 egg
- 2 egg whites
- 2 tsp. vanilla
- 1 c. apple juice
- 2 c. all-purpose flour
- 3/4 c. whole wheat flour
- 2 tsp. baking powder
- 2 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/2 tsp. baking soda
- 3 c. peeled, cored and sliced cooking apples (such as Golden Delicious or McIntosh)
- 1/2 c. finely chopped walnuts, toasted
- powdered sugar (optional)
- vanilla yogurt (optional)
- ground nutmeg (optional)

- 2 Tbsp. corn syrup
- 1 (8 oz.) can pineapple slices (juice pack), drained and halved
- 4 maraschino cherries, halved
- 1 c. all-purpose flour
- 1 tsp. baking powder
- 2 egg whites

- 3/4 c. sugar
- 1/2 c. skim milk
- 2 Tbsp. margarine
- You will also need nonstick spray coating.
