Pulled Pork Tacos

  1. Heat oil in a large frying pan over medium heat. Working in batches, sear pork for 2-3 mins. Set aside. Add onion and carrot to pan. Cook, stirring, for 3 mins. Add garlic and fennel. Cook, stirring, for 30 seconds, or until fragrant. Add tomatoes and stock. Bring to a boil, reduce heat and return pork to pan.
  2. Simmer, covered, for 1 hour. Uncover and simmer for another 30 mins, or until sauce thickens. Remove pork from sauce and shred. Return pork to pan. Add cilantro and season. Transfer to a large serving bowl. Serve with tortillas, cheese, cucumber and sour cream.
