Pulled Pork Tacos
- 2 tbsp vegetable oil
- 1 1/4 lb pork neck, thickly sliced
- 1 None medium onion, finely chopped
- 1 None large carrot, finely chopped
- 1 clove garlic, minced
- 1 tsp ground fennel
- 1 (13.5 oz) can chopped tomatoes
- 1 cup chicken stock
- 1/2 cup fresh cilantro, roughly chopped
- None None soft tortillas, to serve
- None None Cheddar cheese, grated, to serve
- None None diced cucumber, to serve
- None None sour cream, to serve
- Heat oil in a large frying pan over medium heat. Working in batches, sear pork for 2-3 mins. Set aside. Add onion and carrot to pan. Cook, stirring, for 3 mins. Add garlic and fennel. Cook, stirring, for 30 seconds, or until fragrant. Add tomatoes and stock. Bring to a boil, reduce heat and return pork to pan.
- Simmer, covered, for 1 hour. Uncover and simmer for another 30 mins, or until sauce thickens. Remove pork from sauce and shred. Return pork to pan. Add cilantro and season. Transfer to a large serving bowl. Serve with tortillas, cheese, cucumber and sour cream.
