Vietnamese Chicken And Cabbage Salad
- 1/2 None rotisserie chicken, meat shredded
- 1/4 head Chinese cabbage (wombok), finely shredded
- 1/4 head red cabbage, finely shredded
- 2 None medium carrots, peeled, coarsely grated
- 4 None spring onions, thinly sliced
- 1/2 cup coarsely chopped fresh cilantro leaves
- 1/4 cup coarsely chopped fresh mint leaves
- 1/4 cup roasted peanuts, coarsely chopped
- 2 tbsp mayonnaise
- 1/4 cup lemon or lime juice
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- Combine shredded chicken, cabbage, carrots, 1/2 the onions, herbs and 1/2 the peanuts in a large serving bowl.
- Whisk together mayonnaise, lemon juice, fish sauce and sugar then pour over salad and toss to combine.
- Serve salad sprinkled with remaining onions and peanuts.
