Salmon Patties

  1. Cook potatoes in a saucepan of boiling water for 15-20 mins, until tender. Drain well. Mash with butter in large bowl until almost smooth. Season to taste.
  2. Add breadcrumbs, salmon, onion, lemon peel and juice, egg and Tabasco; mix well. Cool slightly.
  3. Meanwhile, for the dill sauce, combine all ingredients in a small bowl. Season to taste.
  4. Shape salmon mixture into 8 rectangular patties. Roll in flour, shaking off excess. Heat oil in a large skillet on high heat. Cook patties in 2 batches for 5-6 mins, turning once, until golden all over and heated through. Drain on paper towel.
  5. Serve salmon patties with dill sauce, salad and lemon wedges.
