Salmon Patties
- 4 None potatoes, peeled and chopped
- 2 tbsp butter
- 1 cup fresh breadcrumbs
- 1 can (7 oz) red or pink salmon, drained and flaked
- 4 None green onions, thinly sliced
- 1 None lemon, peel grated and lemon juiced
- 1 None egg, lightly beaten
- None None Few drops Tabasco sauce (optional)
- 1/3 cup flour, seasoned with salt and pepper
- 1/4 cup vegetable oil
- None None Salad and lemon wedges, to serve
- None None FOR THE DILL SAUCE
- 1/4 cup mayonnaise
- 1/4 cup plain yogurt
- 1 tbsp chopped dill
- 1 tbsp chopped capers
- Cook potatoes in a saucepan of boiling water for 15-20 mins, until tender. Drain well. Mash with butter in large bowl until almost smooth. Season to taste.
- Add breadcrumbs, salmon, onion, lemon peel and juice, egg and Tabasco; mix well. Cool slightly.
- Meanwhile, for the dill sauce, combine all ingredients in a small bowl. Season to taste.
- Shape salmon mixture into 8 rectangular patties. Roll in flour, shaking off excess. Heat oil in a large skillet on high heat. Cook patties in 2 batches for 5-6 mins, turning once, until golden all over and heated through. Drain on paper towel.
- Serve salmon patties with dill sauce, salad and lemon wedges.
