Italian-Style Bean Salad With Mozzarella
- 1 clove garlic, crushed
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 7 oz green beans, trimmed and halved
- 1 can (15 oz) pink beans, drained and rinsed
- 1 can (15 oz) white beans, drained and rinsed
- 2 tsp finely chopped fresh thyme
- 2 tsp finely chopped fresh oregano
- 1/4 cup coarsely chopped fresh flat-leaf parsley
- 4 oz mozzarella cheese, thickly sliced
- 1/2 cup drained sun-dried tomatoes, thinly sliced
- 1 medium onion, thinly sliced
- 1 cup pitted black olives
- Whisk garlic, oil and lemon juice in a small bowl. Set aside.
- Boil, steam or microwave green beans until tender; drain. Rinse under cold water; drain.
- Place green beans and canned beans in a large bowl with remaining ingredients and dressing; toss gently to combine.
