Pork And Cheese Quesadillas With Guacamole
- 2 None large avocados, chopped
- 1 None small tomato, deseeded, finely chopped
- 1/2 None small red onion, finely chopped
- 1 None long red chili, deseeded, finely chopped
- 1 cup fresh cilantro leaves, finely chopped
- 2 tbsp lime juice
- None None Pork and Cheese Quesadillas
- 3 tbsp olive oil
- 1 lb ground pork
- 1 None medium green pepper, finely chopped
- 1 None long red chili, finely chopped
- 1 clove garlic, minced
- 1/2 cup fresh cilantro leaves, coarsely chopped
- 10 None large tortillas
- 7 oz aged cheddar cheese, grated
- Heat 1 tbsp oil in a large frying pan. Cook ground pork, stirring, for about 10 mins, or until browned. Add green pepper, chili and garlic. Cook, stirring, until fragrant. Remove from heat then fold in cilantro.
- Meanwhile, to make guacamole, mash avocados roughly with a fork. Add tomato, onion, chili, cilantro and lime juice. Season to taste with salt.
- Brush 1 side of tortillas with remaining oil. Spread pork mixture evenly over 5 tortillas, oiled side down, and sprinkle with cheese. Top with remaining tortillas, oiled side up. Cook in a heated sandwich press or nonstick frying pan until browned lightly on both sides and cheese melts. Cut into quarters and serve with guacamole.
