Quick Beef Stroganoff
- 1 lb beef stew meat, trimmed, cut into thin strips
- 2 tbsp all-purpose flour
- 2 tsp sweet paprika
- 2 tbsp vegetable or olive oil
- 1 None large Spanish onion, thinly sliced
- 1 None small red pepper, thinly sliced
- 2 cloves garlic, minced
- 7 oz button mushrooms, thinly sliced
- 1 None small zucchini, thinly sliced
- 3/4 cup beef stock
- 1 (13.5 oz) can cherry tomatoes
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 3/4 cup sour cream, at room temperature
- None None cooked long-grain white rice, to serve
- Toss beef in flour and paprika. Heat 1 tbsp oil in a medium frying pan over medium-high heat. Cook beef, in batches, for 4-5 mins, or until beef is browned. Set aside.
- Add remaining oil to pan. Saute onion, pepper and garlic for 5 mins, or until softened. Add mushrooms and zucchini. Cook for 3 mins, or until mushrooms soften. Return beef to pan along with stock, tomatoes, tomato paste, Worcestershire sauce and sour cream. Simmer for 2-3 mins, until heated through.
- Serve stroganoff with rice.
