Apple Strudel
- 1/3 cup pine nuts
- 9 tbsp butter
- 1 1/4 cups fresh breadcrumbs
- 2 lbs cooking apples, such as Golden Delicious, peeled, cored and chopped
- 4 tbsp lemon juice
- 2 cups all-purpose flour, plus more for dusting
- Pinch None salt
- 2 None eggs
- 4 tbsp sunflower oil
- 1/3 cup raisins
- 2/3 cup sugar
- None None Powdered sugar, for dusting
- For the filling, toast pine nuts in a dry pan until golden brown. Remove and allow to cool. Melt 5 tbsp butter in a pan and saute breadcrumbs until light brown. Remove and allow to cool. Toss apples in lemon juice and set aside.
- For the pastry, mix together flour, salt, eggs, oil and 3 tbsp water into a smooth dough. Turn onto a work surface lightly dusted with flour and knead for 10 mins. If the dough becomes dry, add a few drops of oil. Cover and leave to rest for 30 mins at room temperature.
- Preheat oven to 400u0b0F. Melt remaining butter in a saucepan. Roll out pastry, on a kitchen towel dusted with powdered sugar, to form a 15 x 24 inch rectangle. Brush with half of the melted butter, sprinkle with breadcrumbs, apples, raisins, pine nuts and sugar. With the help of the kitchen towel, roll up the strudel like a cigar.
- Line a baking sheet with parchment and set the strudel on it diagonally with the seam underneath. Brush with remaining melted butter and bake for 30-35 mins. When the strudel is cooked, allow to cool, then dust with powdered sugar. Serve with vanilla custard.
