Fava Bean, Ricotta And Bacon Linguine
- 8 oz frozen fava beans
- 14 oz linguine
- 4 slices bacon or prosciutto
- 2 tbsp extra virgin olive oil
- 1/4 cup shredded mint, plus additional, to serve
- 7 oz ricotta cheese
- Cook fava beans in a saucepan of boiling, salted water for 2 mins. Drain. Cool in ice-cold water. Drain again. Remove and discard skins.
- Cook linguine in a large saucepan of boiling, salted water according to package directions. Drain.
- Meanwhile, place bacon or prosciutto on a baking pan and cook under a preheated broiler for 2 mins each side, until crisp. Drain on paper towel and tear into pieces.
- Return linguine to pan with oil, fava beans and mint. Toss on medium heat until heated through. Add bacon and ricotta and toss gently. Season to taste. Serve sprinkled with additional mint.
