Spiced Fruit Salad

  1. Place the sugar, 1 cup water, vanilla seeds, ginger, orange zest, cinnamon, star anise and cloves in a saucepan. Bring to a boil and simmer for 5 mins until thickened. Remove from the heat and stir in the honey. Strain through a sieve and discard the spices.
  2. Mix the fruit together in a bowl, stir in the syrup and chill in the refrigerator for 1 hour before serving.
