Braised Pork Curry
- 1 tbsp vegetable or peanut oil
- 1 1/4 lb boneless pork ribs, cut into 3/4 inch pieces
- 1/3 cup red curry paste
- 2 tbsp brown sugar or palm sugar
- 4 None green onions, sliced diagonally, plus extra to serve
- 1 lb winter squash, peeled, cut into 3/4 inch pieces
- 9 oz frozen or fresh green beans
- 1 (13.5 oz) can coconut milk
- 1 tbsp fish sauce
- None None steamed rice and lemon wedges, to serve
- Heat a wok or large frying pan over medium-high heat. Add oil and swirl to coat. Cook pork for 2 mins, or until browned all over. Set aside.
- Add curry paste to wok along with sugar and onions. Stir-fry for 30 seconds. Return pork to wok along with any juices. Bring to a boil then reduce heat and simmer, covered, for 45 mins. Add squash and cook for 10-15 mins, or until squash and pork are tender. Stir in green beans, coconut milk and fish sauce. Cook until beans are hot.
- Serve pork curry with rice and lemon wedges. Sprinkle with extra green onions.
