Surf 'N' Turf
- 2 tbsp butter
- 3 tbsp flour
- 1 1/4 cups milk, warmed
- 1 cup dry white wine
- 3/4 cup light cream
- 1 lb mixed seafood, such as shrimp and bay scallops
- 2 tbsp finely chopped fresh dill
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 4 None New York strip steaks (7-8 oz each)
- Melt butter in medium saucepan on medium heat. Add flour; cook, stirring, until mixture bubbles and thickens. Gradually add milk, stirring, until mixture boils and thickens.
- Bring wine to a boil in large skillet. Reduce heat to low; simmer until reduced by half. Add white sauce, cream and seafood; bring to a boil. Reduce heat to low; simmer for 5 mins, or until seafood is cooked through. Stir in dill and lemon juice.
- Heat oil in large skillet on medium-high heat. Cook steaks until desired doneness. Serve steaks topped with seafood sauce.
