Salmon Phyllo Tarts
- 9 oz phyllo pastry
- 2 tbsp butter, melted
- 14 oz full-fat soft cheese
- 2 tsp curry powder
- 2 None red-skinned apples, cored and diced
- 8.5 oz Gravlax (marinated smoked salmon) or plain smoked salmon, cut into thin strips
- None None Fresh dill sprigs, to garnish
- Preheat the oven to 400u0b0F. Cut the phyllo pastry sheets into 36 squares, 4 x 4 inches each. Take three of the squares and brush lightly with melted butter. Stack the buttered squares, each slightly offset. Press buttered-side down into one hole of a 12-hole muffin pan. Repeat with the rest of the pasty squares and butter.
- Bake for 10-12 mins until the pastry is crisp and golden. Leave to cool. Mix together the soft cheese and curry powder and stir in the diced apple. Season to taste.
- Fill the phyllo pastry cups with the soft cheese mixture and top with the salmon strips. Garnish with fresh dill.
