Mixed Berry Loaf With Jam And Cream
- 3 1/4 cups self-rising flour
- 6 tbsp cold butter, chopped
- 1 lb frozen mixed berries
- 1/4 cup milk + 1 tbsp extra to brush
- None None raspberry jam, to serve
- None None whipped cream, to serve
- Preheat oven to 425u0b0F. Grease a baking tray.
- Place flour in a large bowl. Using your fingertips, cut in butter until mixture resembles fine breadcrumbs. Stir in berries. Add milk and, using a round-bladed knife, mix ingredients until combined. Turn dough out onto a lightly floured work surface and knead gently.
- Shape into an 8 inch disc. Place on prepared tray. Using a lightly floured knife, mark 8 equal wedges on top. Brush top with extra milk. Bake for 25 mins, or until golden brown and sounds hollow when tapped on the bottom. Transfer to a wire rack to cool. Serve warm with raspberry jam and whipped cream.
