Meringue Kisses With Balsamic Strawberries
- 3/4 cup granulated sugar
- 1 None egg white
- 2 tsp cornstarch
- 1 tsp balsamic vinegar
- 2 oz semi-sweet chocolate, finely chopped
- 3/4 cup mascarpone cheese
- None None FOR THE BALSAMIC STRAWBERRIES
- 9 oz strawberries, hulled and quartered
- 2 tbsp brown sugar
- 1 tbsp balsamic vinegar
- 1 tbsp brandy
- Preheat the oven to 250u0b0F. Lightly grease 3 baking pans and line with parchment paper.
- Place sugar and 1/2 cup water in a small saucepan on medium heat. Stir until sugar has dissolved. Bring to a boil. Remove from heat.
- Meanwhile, beat egg white, cornstarch and vinegar in a medium heatproof bowl with an electric mixer until foamy. Continue beating while gradually adding hot syrup in a thin steady stream. Beat for 10 mins, until mixture is thick. Cool. Fold in chocolate. Spoon meringue into a piping bag fitted with a 1/3-inch plain tip. Pipe 1-inch meringues onto prepared pans. placing them 2 inches apart.
- Bake 25-30 mins, until dry to touch. Turn off oven. Prop door slightly ajar, and leave meringues to cool completely.
- For the balsamic strawberries, toss all ingredients in a medium bowl until strawberries are well coated. Let stand 30 mins.
- To serve, top each meringue with a little mascarpone and a balsamic strawberry.
