Yule Log
- 5 None eggs, separated
- 1/2 cup granulated sugar
- 5.25 oz dark chocolate, melted
- 1 1/4 cups heavy cream
- 2/3 cup dried cranberries, soaked in 3 tbsp brandy, a few reserved to decorate
- None None powdered sugar and cocoa powder, to dust
- None None chocolate holly leaves, to decorate
- Preheat oven to 350u0b0F. Grease and line a 9x13 inch jelly roll pan with parchment paper.
- Whisk together egg yolks and sugar until creamy. Add chocolate and 3 tbsp hot water. Whisk egg whites to soft peaks then fold in. Transfer to prepared pan and bake for 25-30 mins. Place a damp tea towel on a work surface and cover with parchment paper. Invert cake onto parchment and peel away used parchment from cake. Cover with a new piece of parchment paper then roll up loosely. Let cool on a wire rack.
- Whip cream to soft peaks. Unroll roulade and spread whipped cream over cake. Scatter cranberries over top then roll up. Dust with powdered sugar and cocoa powder. Decorate with chocolate holly and reserved cranberries.
