Frittata

  1. Heat oil and cook vegetables until crisp and tender.
  2. Beat eggs, cream, salt, pepper and thyme.
  3. Stir in vegetables, bread, Cheddar cheese and cream cheese.
  4. Spray with Pam or butter a quiche pan or 8 x 8-inch Pyrex dish.
  5. Bake, uncovered, for 35 to 45 minutes in a 350u0b0 preheated oven.
  6. Makes 6 generous servings.
