Frittata
- 2 Tbsp. olive oil
- 1 onion, chopped
- 1 zucchini, thinly sliced
- 1 (10 oz.) pkg. chopped broccoli, thawed
- 1 (8 oz.) container Egg Beaters plus 1 egg or 6 extra large eggs
- 1 small jar chopped pimentos, drained
- 1/3 c. light cream
- 1 tsp. salt
- 1/2 tsp. white pepper
- 1/2 c. soft bread, diced
- 4 oz. grated Cheddar cheese
- 8 oz. cream cheese, diced
- 1/2 tsp. dried thyme
- 1/3 c. diced onion
- Heat oil and cook vegetables until crisp and tender.
- Beat eggs, cream, salt, pepper and thyme.
- Stir in vegetables, bread, Cheddar cheese and cream cheese.
- Spray with Pam or butter a quiche pan or 8 x 8-inch Pyrex dish.
- Bake, uncovered, for 35 to 45 minutes in a 350u0b0 preheated oven.
- Makes 6 generous servings.
