Chicken Minestrone
- 1/4 lb green beans, roughly chopped
- 2 oz small pasta
- 1 tsp oil
- 5.25 oz chicken breast
- 1 None medium onion, finely diced
- 1 tsp tomato paste
- 3 cups chicken stock
- 1 None medium carrot, peeled and diced
- 1/2 lb broccoli, cut into florets
- 5 None tomatoes, coarsely chopped
- 2-3 sprigs fresh parsley, chopped
- 2 tsp store-bought pesto
- Blanch green beans in boiling salted water. Drain. Cook pasta until al dente. Drain.
- Meanwhile, heat oil in a large saucepan and saute chicken for 2 mins per side. Season then add onion and tomato paste and cook for 3-4 mins. Add stock, carrot, broccoli and tomatoes. Bring to a boil, cover then simmer for 10 mins. Remove chicken, dice then return to pan. Add pasta and beans. Serve with parsley and pesto.
