Mango Macadamia Bars
- 1 1/4 cups flour, sifted
- 2/3 cup self-rising flour, sifted
- 2/3 cup macadamia nuts
- 6 tbsp butter, chopped
- 1/2 cup sugar
- 1 None large egg
- 12 oz sour cream
- 1 tbsp brown sugar
- 2 None mangoes, stone removed, thinly sliced
- None None flaked coconut, to serve
- None None whipped cream, to serve
- Preheat oven to 375u0b0F. Line an 8 x 12 inch baking dish with parchment paper. For the pastry base, place flours, macadamia nuts, butter, sugar and egg in a food processor. Pulse until combined. Using floured fingertips, press dough into dish. Bake 15-20 mins until golden. Cool 10 mins.
- Meanwhile, for the topping, mix sour cream and sugar together in a bowl. Spread evenly on base. Arrange mango slices in a single layer on top. Bake 15-20 mins, until topping is firm. Cool completely in dish. Cut into rectangles, sprinkle with coconut and top with whipped cream, to serve.
