Banana Caramel Puff Pastry Slices

  1. Preheat the oven to 400u0b0F. On a floured surface, roll out the puff pastry and cut into 6 squares about 4 x 4 inches. Place on a baking sheet lined with parchment paper and bake for 20 minutes until golden brown. Remove and allow to cool then divide each piece in half horizontally so you have a top and bottom. Set aside.
  2. In a small pan, caramelize 1/4 cup sugar with a small amount of water and then drizzle over the top half of the puff pastry slices. In a larger pan, caramelize 1 cup of the sugar with 2 tbsp water then de-glaze with the cream for 1 minute, stir in well then allow to cool. Add the sliced bananas to the caramel sauce and mix in well.
  3. To serve, mix remaining 1/4 cup sugar, cream cheese and lemon juice together and spoon a portion onto the bottom half of the puff pastry slices. Top with bananas and caramel sauce and finally the top half of the puff pastry. Serve immediately.
