Country Style Beef And Potato Casserole
- 2 1/4 lb beef chuck steak, cut into 3/4 inch cubes
- 1/2 cup all-purpose flour
- 2 tbsp olive oil
- 3 None Spanish onion, halved
- 2 cloves garlic, minced
- 2 slices bacon, coarsely chopped
- 2 tbsp tomato paste
- 3 cups beef stock
- 1 (15 oz) can crushed tomatoes
- 1/4 cup Worcestershire sauce
- 2 None potatoes, coarsely chopped
- 1 None sweet potato, coarsely chopped
- 1 None red pepper, coarsely chopped
- 1 tbsp coarsely chopped fresh thyme leaves
- Coat beef in flour, shaking off excess. Heat oil in a large saucepan over medium-high heat. Working in batches, cook beef until browned. Remove from pan.
- Add onion, garlic and bacon to pan and cook until bacon is crispy. Add tomato paste and cook, stirring, for 1 min.
- Return beef to pan along with stock, tomatoes and Worcestershire sauce. Bring to a boil. Reduce heat and simmer, covered, for 1 hour, stirring occasionally.
- Add potatoes, sweet potato and pepper to pan. Simmer, uncovered, stirring occasionally, for 30 mins, or until beef is tender. Season to taste. Serve sprinkled with thyme.
