White Bean Salad With Cilantro, Mint And Lemongrass
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 5 oz baby spinach leaves
- 1 None red onion, thinly sliced
- 1 clove garlic, crushed
- 1 tbsp coarsely chopped fresh cilantro
- 1 tbsp coarsely chopped fresh mint
- 1 tbsp thinly sliced fresh lemongrass
- 1 piece (3/4 inch) fresh ginger, grated
- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 2 tbsp sweet chili sauce
- 2 tbsp lime juice
- 1 tsp honey
- 2 None fresh small red Thai chili peppers, seeded and thinly sliced
- Combine the beans, spinach and onion in a large bowl.
- Whisk the garlic, herbs, lemongrass, ginger, oil, sauces, juice and honey in a medium bowl.
- Just before serving, drizzle the dressing over the salad and toss gently to combine. Sprinkle with chili pepper.
