Flower Cookies
- 8 tbsp (1 stick) butter, at room temperature
- 1/2 cup granulated sugar
- 1 None egg, at room temperature
- 2 1/2 cups flour
- 1/2 tsp baking powder
- 2/3 cup powdered sugar
- 2 None drops blue food color
- 24 None royal icing flowers
- Preheat the oven to 350u0b0F. Line 2 baking sheets with parchment paper. Beat butter and granulated sugar in a large bowl with an electric mixer on medium speed until pale and creamy. Add egg and beat until blended. Add flour and baking powder; stir to combine. Shape dough into a disk. Cover with plastic wrap. Refrigerate for 30 mins or until firm.
- Using a rolling pin, roll dough out between 2 sheets of parchment paper to 1/8-inch thickness. Using a 2 1/2-inch flower-shaped cookie cutter, cut out shapes from dough. Re-roll dough as needed. Place on prepared pans with room for spreading.
- Bake for 10 mins, or until golden. Cool on pan 2 minutes. Remove to wire racks; cool completely.
- Mix powdered sugar and 1 to 1 1/2 tbsp cold water to form a spreadable icing. Reserve half the icing. Tint remaining icing blue; spread over half the cookies. Spread some of the white icing on remaining cookies. Pipe remaining white icing on center of cookies. Top with a flower. Let stand until icing is set.
