Hugs And Kisses Cupcakes
- 8 tbsp (1 stick) butter, softened
- 1 tsp vanilla extract
- 3/4 cup granulated sugar
- 2 None eggs
- 1 1/2 cups self-rising flour
- 1/3 cup plus 2 tsp milk
- None None Pink food color
- 1 tbsp unsweetened cocoa powder
- None None White mini marshmallow hearts, to decorate
- None None FOR THE BUTTERCREAM
- 1 1/2 cups powdered sugar
- 2 tbsp milk
- Preheat the oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
- Beat butter, vanilla, granulated sugar and eggs in a large bowl with electric mixer until fluffy. Stir in sifted flour and 1/3 cup milk, in 2 batches.
- Divide mixture among 3 small bowls. Tint one bowl pink. Blend sifted cocoa with 2 tsp milk in a cup; stir into second bowl. Leave third bowl plain.
- Drop alternate teaspoonfuls of batters into muffin cups. Pull a skewer through batters for a marbled effect.
- Bake for 20 mins, or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
- For the buttercream, beat butter in medium bowl with electric mixer until as white as possible. Beat in sifted powdered sugar and milk, in 2 batches. Tint pink with food color.
- Spread cooled cupcakes with buttercream. Position marshmallows on cakes -in a cross for kisses and a circle for hugs.
